Mexican Chocolate Oatmeal

I eat oatmeal quite often and I’m always thinking of ways to make each bowl different than the last. Sometimes I eat it plain, made sweet and creamy with bananas, or I’ll toss in chopped apples and slivered almonds. Other times I’ll eat it vanilla almond milk, cashews and raspberries. I almost always add cinnamon, nutmeg, ginger or vanilla and sometimes all three! I just love the versatility of this hot breakfast cereal. One of my absolute favorite things to add to my oatmeal is CHOCOLATE. I LOVE chocolate and this is a deliciously clean way to curb my cravings for the creamy goodness of chocolate without the guilt. I called this “Mexican Chocolate” Oatmeal because of delicate hint of cinnamon entangled with delectable chocolate flavor that makes this breakfast absolutely perfect.

Fitness Discovery: So, Running Outside IS Harder than Treadmill Running…

Before
Yesterday, I decided that instead of driving to the gym to run of the treadmill for 20 or so minutes, I was going to try running outside. Simple enough right? Running is starting to feel more like second nature to me, and while the gym is a convenience in it’s self, I like the freedom of stepping out of my house, and going for a jog. In preparation, I downloaded the interval timer app Seconds Pro, which, by the way, is worth far more than the measly $2.99 I paid for it, and I added my running schedules for the next 10, weeks. I also went out and purchased an armband so I could carry my ipod with ease. I was excited. Instead of being in the hot crowded gym, I was going to be running freely outside, wind blowing in my hair, and whisking the sweat off of my face as I ran. This would be easier, or so I thought.

Sloppy Bhartas

(Curried Eggplant Sandwiches)

I made (assembled) theseĀ  yesterday when I was having a burger/sandwich craving, but was feeling equally tempted to try the Baingan Bharta (eggplant curry) I bought from Trader Joe’s. If you have Trader Joe’s in your area then this recipe will be pretty easy, but if not I’ve found a few Baingan Bharta recipes that are pretty clean and seem to be winners. Continue reading
